Spring is well and truly with us, and while lockdown is helping us appreciate spring and nature, you might also find that you are spending more time in your kitchen, so we have a great G & T Jelly recipe for you…..

Serves 6-8.  You will need 4-6 gelatine leaves (see individual brands for guidelines), 100ml Cricketers Gin, 400ml tonic water, 50g of caster sugar, and your preferred berries.

Soak your gelatine leaves in water.  Pour your gin, tonic and sugar into a saucepan and heat gently to dissolve the sugar. Squeeze out the gelatine leaves, add to the pan and whisk in.  Add some berries and squash them up a bit.  Pour the mix through a sieve (use a muslin or tea towel for a very smooth result).  Place some whole berries into your moulds, then pour in your jelly mix.  Chill until set and decorate with your remaining whole berries.  Serve with ice cream, sorbet or cream!
